Made with our rich & Nutty Pecan Pie Butter, brown rice flour, and a touch of maca and lucuma, these treats offer deep caramel notes and a natural sweetness that feels downright luxurious. Lightly sweetened with maple syrup and packed with vanilla protein, they’re perfect for a quick energy boost, a cozy afternoon tea, or a healthy post-workout snack.

✨ Ingredients

(Makes about 12 cookies)

  • 120 g pecan butter

  • 100 g brown rice flour

  • 10 g maca powder

  • 10 g lucuma powder

  • 60 g chopped pecan nuts

  • 30 g vanilla protein powder (about 1 scoop)

  • 25 g coconut oil, melted

  • 60 ml maple syrup

  • 1 egg white (or 1 tbsp ground flaxseeds + 3 tbsp water for a vegan option)

  • 5 ml pure vanilla extract (1 tsp) + 1 tbs of all spiceĀ Ā 

  • 3 g baking soda (½ tsp)

  • 1 g sea salt (a pinch)

  1. Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

  2. Mix the wet ingredients:
    Ā In a medium bowl, whisk together pecan butter, melted coconut oil, maple syrup, vanilla, and egg white (or flax egg) until creamy and smooth.

  3. Combine the dry ingredients:
    Ā In another bowl, mix brown rice flour, maca, lucuma, protein powder, baking soda, and salt.

  4. Fold it all together:
    Ā Gradually add the dry mixture to the wet ingredients, stirring until a soft, slightly sticky dough forms. Fold in the chopped pecans.

  5. Shape and bake:
    Scoop about 1 heaped tablespoon (30 g) of dough per cookie onto the tray and gently flatten each one with your fingers or a fork.
    Ā Bake for 10–12 minutes, until golden at the edges and fragrant.

  6. Cool and enjoy:
    Let the cookies cool on the tray for a few minutes before transferring them to a rack. The warm, nutty aroma is pure comfort!
